KING TRUMPET (Pleurotus eryngii)

King Trumpet mushrooms are tall, tree-looking mushrooms with a thick white stem and a flat brown cap. Originally native to Mediterranean regions of Europe, the Middle East, and North Africa, they have grown in popularity and cultivated worldwide.

Their mild taste is perfect for pairing with strong marinades and flavors like Thai red curry. They are loved by vegetarians and vegans for their meaty texture and striking presentation. Use a sharp knife to score the mushrooms in a tight crisscross pattern before sautéing them in a hot pan to get a beautiful sear and crunchy texture. They can be eaten in their entirety.
